Jane's Pecan Teacakes

Variations of these cookies are also known as wedding cookies or Russian tea cakes. This particular variation Jane adapted from a shortbread cookie recipe. This simple recipe is easy to make.

2 sticks butter (very important! butter must be at room temperature)
1 cup powdered sugar
1 tablespoon vanilla extract
1 tablespoon nutmeg
1/4 teaspoon salt
3/4 cup pecans, broken into pieces
2 1/4 cups flour

beat the butter and the sugar together until fluffy
add vanilla, nutmeg, and salt
add the pecans
add the flour last
stir until the dough sticks together

roll into 1" balls
place 1" apart on a cookie sheet
bake 9 minutes at 400 degrees

while warm, roll in powdered sugar
let cookies completely cool
roll in powdered sugar again

makes about 4 dozen
