2 sticks (8oz) butter, softened
1/2 cup granualted white sugar
1 large egg yolk
4 Tablespoons (was 3) pure maple syrup
1/2 teaspoon pure vanilla extract
2 cups all purpose flour
1 1/4 cups pecans, coarsely chopped (approx. 6oz)
Beat the butter with a mixer, then blend in the sugar. Add maple syrup, egg yolk, and vanilla. Mix in the flour and pecans. Divide the dough in half and roll it into logs in plastic wrap. Refrigerate the logs for at least 2 hours. Slice cookies and place on cookie sheet. They don't spread much, so cut them thin, about 1/2 inch. Cook them at 350F for 15-20 minutes.
